Today's smoking extravaganza consists of:
10 lbs of brisket (2 5lbers)
2 beef rib racks
2 pork back racks
3 lbs salmon
2 huge packs of wings
1 lb hatch green chilis
I don't know if it'll all actually fit on the grill! I'm doing one of the briskets fat side up and one fat side down, both barked, and kind of an experiment.
I do know: I'll be eating like a pig for the game.
