Sunday Night Food Thread (SNiFT): June 12, 2016

It's Sunday night, so that must mean it's time for this week's entery of SNIFT. Take off those pants and join in the conversation.

I gotta admit I'm having a hard time coming up with a topic for SNIFT tonight.  Team Strike Force bfd had a really crummy week last week.  At times, it's hard enough to write when you're in a great mood.  When you're distracted by terrible news (something I'm not going to get into here), that's another thing altogether.

Thus, we ate on the run quite a bit last week, mostly snacking on lighter things.  My wife makes this delightful, simple dish, and since I can't think of anything else right now, this is the best I've got.

Mrs. bfd's Beet Salad

3 beets, prepared (boil, bake), skinned, and diced
2 crispy apples, cores removed, diced
1 cup raisins
2 TBS apple cider vinegar
Small bunch of mint, finely chopped

Mix everything together, chill, and serve.  Easy, peasy, and not at all chicken greasy.

With the summer officially upon us, I'd love to hear your favorite summer-y dishes, especially salad related dishes, and especially those that don't have lettuce.
